Twice Baked Potatoes

If you're looking for a vegan-friendly option - this isn't it!



Prep Time:

30 minutes

These twice baked potatoes were a first try and will definitely be made again.


4 baking potatoes

1 cup shredded cheddar cheese

2 tablespoons butter

1 cup sour cream

4 tablespoons chopped chives

1/2 cup milk

salt and pepper

garlic infused olive oil


Pre-heat oven to 400 degrees

Rub olive oil onto potatoes and sprinkle with sale and pepper.

Place on a parchment lined baking sheet and bake at 400 for 1 hour.

Take out and peel one of the potatoes and put the flesh into a bowl.

Slice the other three potatoes in half lengthwise, scoop out the flesh and add to the bowl.

Set the skins back on the baking tray.

Mix potatoes together with the butter, sour cream & chives until smooth.

Fill the skins with the potato mixture and cover with the cheddar cheese.

Bake again until the cheese has melted.
