Tomato Tortellini Soup

The perfect soup/pasta dish for a chilly day.



Prep Time:

15 minutes


1 cup onion, chopped

1 tablespoon garlic, minced

4 cups vegetable broth

2 cans crushed tomatoes

1 tablespoon Italian seasoning

3/4 cup whole milk

1 bag fresh spinach

1 20 oz. bag frozen cheese tortellini

Grilled cheese:


Gruyere cheese


Chop and sauté onion and garlic.

Dump crushed tomatoes, broth, and seasoning into pot.

Add uncooked tortellini.

Add fresh spinach right before serving so it isn’t slimy.

Serve hot with grilled cheese sandwiches!
