Fig & Spinach Salad with Walnuts & Goat Cheese

Figs are delicious...but what can you do with them?



Prep Time:

30 minutes

Figs are little powerhouses of nutrients and they work great in salads.


4-5 cups of fresh spinach

½ cup chopped walnuts

1 can chickpeas, drained and rinsed

¾ cup dried figs, cut into pieces

1 large carrot, ribboned with a veggie peeler

¾ cup crumbled goat cheese

For the dressing

3 tablespoons olive oil

2 tablespoons fig balsamic vinegar

1 tablespoon honey

1 tablespoon chili pepper

salt and pepper


  1. Mix together the dressing and set aside.

  2. Place spinach into a bowl.

  3. Top with chickpeas figs, and carrots.

  4. Top with goat cheese, walnuts, and dressing.

Eat and enjoy!
