Banana Nut Muffins

No butter. No refined sugar. Healthyish banana muffins with chocolate chips and walnuts.

10 minutes

I wasn’t planning on making these at all today, but when I came home from Pilates and found (almost) rotten bananas on my counter I threw these together. Perfect to grab on the go!


1 1/1 cups flour

1 teaspoon baking soda

4 mashed bananas

1/4 cup honey

1 duck egg (chicken eggs are fine too)

1/2 cup plain Greek yogurt

1 tablespoon vanilla

1 tablespoon olive oil

1 tablespoon milk

3/4 cup mini chocolate chips

1/2 cup chopped walnuts


Heat oven to 350 degrees.

Mix everything together.

Divide into baking cups.

Bake for 20-25 minutes.

Let cool for a few minutes and eat!
