When Life Hands You Lemons...

...and it's blueberry season.

These lemon blueberry baked oatmeal cups are super easy and super healthy. I also got to use my “sword” as my 3-year-old nephew calls the zester that he got me as a birthday gift. They are ready in under an hour and they are vegan and gluten-free, too!

Lemon Blueberry Baked Oatmeal Cups


3 cups rolled oats

2 teaspoons baking powder

2 tablespoons ground flaxseed

2 cups unsweetened almond milk

1/3 cup maple syrup

4 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup blueberries

1/2 cup mini chocolate chips

3 tablespoons lemon zest


Heat oven to 350 degrees.

Mix everything together in a bowl.

Prepare a muffin pan with cupcake liners (my favorite brand is @ifyoucare_usa that I order through Thrive Market) and then fill them with the batter almost to the top.

Bake for 35 minutes.

Take out and enjoy or store for the week!
