To celebrate my new partnership with Kettle & Fire I created this amazing (and amazingly easy!) braised short rib recipe that slowly cooks by itself - all you need are the ingredients and a crockpot!
4 pounds of beef short ribs, off the bone
(Adams Fairacre Farms will prep & cut them for you to save you time!)
2 cups diced carrots
1 cup diced yellow onion
8 cloves chopped garlic
6 ounces tomato paste
14 ounces crushed tomatoes
1 cup dry red wine
3 bay leaves
2 tablespoons rosemary
2 tablespoons thyme
Salt & ground pepper to taste
Toss all the ingredients into the crockpot and cook slowly until the beef falls apart easily.
It's rich and delicious all by itself or you can toss it onto gnocchi or any type of potato you love!
