Warmer weather has started to spring, and flowers are starting to bloom which makes me think of burgers & flip-flops. This turkey burger recipe is super easy to make and doesn’t even require a bun or a grill!
These turkey, kale & feta burgers are super healthy, only have a few ingredients, and make meal prepping really easy for quick lunches during the week. When it comes to serving these tasty burgers, you have many different options. Of course, you can serve on a traditional style bun but if you need a carb-conscious or lighter option try serving in bib lettuce leaves or on top and/or with Brussel Sprout Chips. Or if you’re a pickle lover like myself, serve with pickles loaded on top or alongside grilled or roasted seasonal vegetables. Roasted asparagus is one of my favorites.
If you have some leftover burgers you can store them cooled, in an airtight glass container in the fridge for up to 4 days. They reheat nicely and you can even throw on top of a salad for some extra protein to keep your system revved up and working at full capacity.
Turkey, Kale & Feta Burgers
Serves 6 / prep time: 5 minutes / cook time: 15-20 minutes

1 lb. lean ground turkey
1 ½ cup kale, chopped
1/2 cup crumbled feta cheese
1 teaspoon garlic powder
1 teaspoon sea salt
1 teaspoon pepper
Preheat pan or grill to medium-high heat and lightly oil.
While the pan or grill is preheating, mix together turkey, kale, feta, garlic powder, sea salt, and pepper in a large bowl until well combined. Using your hands to mix and then to form into 6 patties.
Cook on preheated pan or grill until no longer pink in the center, about 15 to 20 minutes.
